Apricot Smoothie

Ingredients:

  • 1/4 cup plain or vanilla yogurt
  • 1/2 cup whole milk

  • 1 tablespoon honey

Directions:

Boiled Custard

Ingredients:

  • 2 cups milk
  • 2 eggs
  • 1/4 cup sugar
  • 1 1/2 teaspoons cornstarch
  • 1 teaspoon vanilla
  • Pinch of salt

Directions:

  • In a medium saucepan, heat the milk over medium-low heat until it just begins to bubble at the edges. Do not boil. Beat eggs, sugar, and cornstarch together in a separate bowl. Add a little of the scalded milk to the egg, sugar, and cornstarch mixture, stirring well. Add this mixture to the scalded milk, stirring constantly.
  • Cook over low heat until the mixture coats a spoon. Remove from heat. When cool, add the salt and vanilla. This is delicious by itself or over fruit or cake.

Blender Cream Soups

Ingredients:

  • 2 cups milk
  • 2 tablespoons flour
  • 2 tablespoons margarine, melted
  • 1 teaspoon salt
  • Dash pepper (as tolerated)

Directions:

    To increase calories, use whole milk or half-and-half.

Garden Spaghetti Salad

Ingredients:

  • 1 pound vermicelli spaghetti
  • 2 whole tomatoes, peeled, seeded, chopped
  • 2 green peppers, chopped
  • 8 scallions, chopped
  • 1 large cucumber, peeled, seeded, chopped
  • 1/2 of 2.62-ounce jar salad seasoning
    • or season with salt and pepper to taste, pinch of oregano

Directions:

  • Cook the spaghetti as directed and drain. Add the other ingredients and mix well. Refrigerate overnight.

High-Protein Milkshake

Ingredients:

  • 1-2 scoops ice cream
  • 3 tablespoons powdered milk
  • 1/4 cup whole milk

Directions:

Chicken and Mushrooms

Ingredients:

  • 2 tablespoons cornstarch
  • 1 can or 16-ounces chicken broth
  • 1 teaspoon prepared mustard
  • 1 tablespoon vegetable oil
  • 4 skinless, boneless chicken breast halves
  • 2 cups sliced mushrooms
  • 1 teaspoon crushed Italian seasoning
  • Dash ground pepper
  • 2 cups cooked rice
  • Salt to taste

Directions:

  • Mix together the cornstarch, chicken broth, and mustard in a small bowl and set aside.
  • In a large frying pan over medium-high heat, heat oil and cook the chicken about 5 minutes on each side or until browned on both sides. Remove the chicken and set aside.
  • Reduce the heat to medium and in the same pan cook the mushrooms with the Italian seasoning and pepper, stirring often, until the mushrooms are tender and the liquid evaporates. Add the reserved cornstarch mixture and cook until the mixture boils and thickens, stirring constantly.
  • Return the chicken to the pan and reduce the heat to low. Cover and cook 5 or more minutes or until the chicken is no longer pink, stirring occasionally. Serve over hot rice.

Fruit Shake

Ingredients:

  • 2 cups juice (apple, apricot, grape, peach), chilled
  • 1/2 cup whole milk

  • 1/2 cup vanilla ice cream

Directions:

  • Put all ingredients into a 1-quart plastic container with lid. Shake vigorously and serve.

Ingredients:

  • 2 tablespoons orange-pineapple juice concentrate, undiluted

  • 1/4 cup lime sherbet
  • Place all ingredients in blender and blend well.

Ingredients:

  • 1 1/2 cups sugar
  • 1/3 cup lemon juice
  • Grated rind of 1 lemon
  • 2 cups whole milk

Directions:

  • Mix the sugar, juice, and rind in an electric mixer or blender at high speed for about 2 minutes. Slowly add the milk.
  • Pour into a freezer tray and freeze.
  • Cut into bite-size pieces to serve.

Tuna Casserole

Ingredients:

  • 1 tablespoon butter or margarine
  • 1/3 cup chopped celery
  • 1/4 cup chopped onion
  • 1 9-oz can tuna, drained
  • 1 10 3/4 -oz can condensed cream of mushroom soup
  • 1/2 soup can water
  • 1 small can (approximately 2.5-oz) chow mien noodles

Directions:

  • Preheat the oven to 350 Degrees Fahrenheit. Sauté the celery y and onions until tender in the butter or margarine.
  • Combine with the tuna, soup, water, and 1/2 can chow mien noodles. Place in a greased 1-quart casserole. Top with the remaining noodles and bake in the oven for 30 minutes.

Linguine with Fresh Tomato and Basil Sauce

Ingredients:

  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 8 large fresh tomatoes, peeled, chopped, and seeded
  • 1/4 cup red wine
  • 1/2 cup chicken broth
  • 1/4 cup fresh basil or 1 tablespoon dried basil
  • Salt and freshly ground pepper to taste
  • 1 pound linguine, uncooked
  • 1 cup Parmesan cheese, freshly grated
  • Fresh ground pepper to taste
  • Red pepper flakes (optional)

Directions:

  • Cook the garlic slowly in olive oil in a medium skillet. Do not brown. Add the chopped fresh tomatoes, wine, broth, and seasonings. Bring to a boil, reduce the heat, and simmer uncovered 15 -20 minutes until the sauce thickens to the desired consistency.
  • When you're ready to serve, cook the pasta in boiling salted water just until tender.
  • Drain well, and toss with tomato sauce. Serve immediately in heated bowls or plates. Top each serving with Parmesan cheese, fresh ground pepper, and red pepper flakes.
  • Note: To peel fresh tomatoes, make a small cross slit at the bottom of the tomato. Plunge in boiling water for 5 seconds to loosen the skin.

Variations:

  • For an extra 110 calories, add an extra 1/4 cup olive oil and another 1/2 cup Parmesan cheese to the recipe.

Peach Fizz

Ingredients:

  • 1 cup peach nectar (or other non-acidic fruit juice) 
  • 1/2 cup club soda

Directions:
